Sweet Potato Fries

It’s no secret that sweet potatoes are much better for you than regular potatoes. What you may not know, though, is just how good. The Center for Science in the Public Interest, which focuses on nutrition and health, as well as food safety, rated the sweet potato number one for nutritional value among all vegetables. The sweet potato outscored it’s other veggie counterparts by over 100 points!
Why is that? Well, sweet potatoes are very rich in complex carbs and have a good amount of dietary fiber, protein and are LOADED with vitamin A (769% for 1 cup). They also have an ample amount of iron, calcium and vitamin C, but not nearly as much as vitamin A. One cup of sweet potato is about 180 calories and only 3 are from fat!
These potatoes are only tossed in olive oil and sprinkled with salt and pepper to let the sweetness really shine. You could of course coat them with sesame seeds and serve with a soy-sauce dip, but I love these simple and mostly undisturbed.
Serve these in place of regular potatoes next time–you won’t regret it!
Sweet Potato Fries
Serves 4
Ingredients
3 small sweet potatoes or 2 medium
salt and pepper
1-2 tablespoons olive oil
Instructions
Preheat oven to 425 degrees.
Wash the sweet potatoes and chop into french-fry sized slices. Toss in olive oil in a zip-lock bag. Line on a foil-covered baking sheet and sprinkle with salt and pepper.
Cook for about 15-20 minutes, flip, and then cook for about 10-15 minutes more, or until the fries are crispy and golden-brown.
