Chocolate-Banana-Marshmallow “Sandwich”

I know I have become somewhat of a jet-setter lately between North Carolina and Massachusetts, and therefore my posts have been suffering, but rest assured things are back to normal now. Well, for a month that is, before I head back to Little Neck for two whole weeks! I can’t wait to just relax on the beach for a long, much deserved vacation before a (hopefully) busy fall at work. We are also going to hit Boston and Newport, Rhode Island while up in Massachusetts, which I am extremely excited for.
Since I’ve been so busy between houses finishing up at work and my vacations, I haven’t been making too many desserts, besides my awesome Strawberry Cake. Tim wanted something sweet at about, oh, midnight one night, so I whipped this up with ingredients on hand. I had actually made it for him a few months back, and he loved it. This time, it wasn’t as good. I think it was because I used Hershey’s bars from camping about three months ago… Whoops. Anyway, the taste is phenomenal and it is quick to throw together. It’s basically like a jacked up S’more, and who doesn’t love S’mores?
Although I took a few bites of this overstuffed, delicious sandwich, I just couldn’t justify eating one myself when I had to be in a bathing suit in a few days. Nonetheless, you must give this a try, especially if you in a time crunch. With a smidgen of peanut butter, you will forget every calorie in this sandwich as you are overcome with bliss. I promise.
Chocolate-Banana-Marshmallow “Sandwich”

Yield: 1 sandwich
Ingredients
2 slices white bread
1 tablespoon butter, room temperature
1 tablespoon light brown sugar, packed
1/8 teaspoon cinnamon
1/2 banana, cut into thin slices
1 milk chocolate bar, cut in half (Hershey’s)
6 regular sized marshmallows
Optional filling: Peanut butter
Instructions
Turn the oven to broil. Line a baking sheet with aluminum foil. Line the marshmallows on the baking sheet and pop the sheet in the oven. Keep a close eye on them, because they only take about a minute or two to cook and will burn in the matter of seconds! Once the marshmallows are golden brown, remove from the oven and set aside. Turn the oven off.
In a small bowl, mix butter, brown sugar and cinnamon until combined. Spread half of the mixture on one side of one slice of bread, and spread the other half on one side of the other slice. Line the banana, toasted marshmallows, and the chocolate bar in as even of a layer as you can on the undisturbed side of one slice of bread and place the other bread, butter side up to form a sandwich.
Put a small pan over medium-high heat and grill the sandwich until both sides are golden brown. Cut in half and enjoy!
