Spinach Salad with Peaches, Bacon & Goat Cheese

It’s a very rare occasion when my brother actually likes the salad more than the main course.  That is exactly what happened when I made this.  Don’t get me wrong, the main course, which was Lemon Tuscan Chicken, was delicious, but this salad was the star of the show.  It is way more than a salad–it’s basically a full meal.  You have your veggies, fruit, dairy, meat…and your fat.  All we’re missing is the starch!  We surely made up for this with my mashed potatoes as a side.

I love playing around with salads as a way to get more veggies into my diet.  I’m always looking for new, exciting ways, for myself and my brothers!  While this isn’t the healthiest salad, it was filling, delicious and surely hit the spot.  The peaches were an awesome addition, especially paired with the creamy goat cheese.  Enjoy!

Spinach Salad with Peaches, Bacon & Goat Cheese

Recipe by Maura Dieringer

Ingredients

1 package fresh spinach leaves (about 6 cups or so)

2 peaches, thinly sliced

5 pieces of bacon, cooked and chopped

1/2 medium red onion, sliced

1 cucumber, peeled, sliced and quartered

1/4 cup spiced pecans

4 oz. goat cheese, crumbled

Instructions

Add the spinach to a large salad bowl.  Top with the additional ingredients and serve with dressing of your choice.  I used oil & balsamic vinegar and it complimented the dish perfectly!

And, when I discovered food blogs I bought the biggest binder I could find, printed out 250 recipes in one day and laminated and categorized each one. My dad was not happy about the ink situation. So, what does this tell you about me? For one, you can trust that every recipe I post is more than delicious and has been meticulously tried and tested for you. Also, that I’m an anal freak. Enjoy!
