Grilled Tuscan Lemon Chicken

Posted on 08/25/2010 by Maura

I love anything lemon.  The word itself draws me into recipes I usually wouldn’t notice.  Lemon Basil pasta? Delicious.  Lemon bars? Phenomenal.  Grilled Tuscan Lemon chicken?  Oh, yes.

When I saw this recipe online, I knew it would be right up my alley.  The ingredients are all simple and fresh, creating a delicious dish that wasn’t too heavy. The finishing touch of grilled, freshly squeezed lemon juice brightens up the entire dish and wakes the chicken right up!

Take heed: the marinating time is very important for this recipe because of the few, light ingredients.  I would recommend letting it sit overnight, as the six hours I did wasn’t quite long enough.  With some grilled veggies and mashed potatoes, you have a delicious meal in only a few minutes!

Grilled Tuscan Lemon Chicken

Recipe by Ina Garten

Ingredients

1 (3-1/2 pound) whole chicken, flattened

kosher salt

1/3 cup olive oil

2 teaspoons lemon zest

1/3 cup freshly squeezed lemon juice

1 tablespoon garlic, mince (3 cloves)

1 tablespoon fresh rosemary, minced

freshly ground black pepper

1 lemon, halved

Instructions

Sprinkle the chicken with 1 teaspoon salt on each side. Combine the olive oil, lemon zest, lemon juice, garlic, rosemary, and 2 teaspoons pepper in a small measuring cup. Place the chicken in a ceramic or glass dish just large enough to hold it flat. Pour the lemon marinade over the chicken, turning it in the dish. Cover the dish with plastic wrap and refrigerate overnight. Turn the chicken 2 or 3 times while it is marinating.

When ready to grill, prepare your charcoal grill (or turn a gas grill on low heat).  Place the chicken on the grill, skin side up, and weigh it down with the dish you used for marinating. Cook for 12 to 15 minutes, until the underside is golden brown. Turn the chicken skin side down, weight again with the dish, and cook for another 12 to 15 minutes, until the skin is golden brown and the chicken is cooked through. Place the lemon halves on the grill, cut side down for the last 10 minutes of cooking. Remove the chicken to a plate or cutting board, cover with aluminum foil, and allow to rest for 5 minutes. Cut in quarters, sprinkle with salt, and serve by squeezing the grilled lemon juice on top.

Enjoy!

About Maura

I have a secret: I cannot do anything in moderation. I always have to take things to the extreme, at the expense of my own and my family's sanity and often times my dad’s checkbook. When I started taking horseback riding lessons, I insisted on having a pony. When I ice skated for probably the second time, I made my mom buy me ice skates that were never again worn. When I thought I wanted to be a teacher, I made my parents turn one of the rooms in the basement into a school room, stocked with an overhead projector, pull-down maps and a real, classroom-sized chalkboard and white board. When I discovered cooking I bossed my older sister around in the kitchen for an entire day, forcing her to make dozens of recipes with me against her will and then had her do all the dishes (sorry Cait). And, when I discovered food blogs I bought the biggest binder I could find, printed out 250 recipes in one day and laminated and categorized each one. My dad was not happy about the ink situation. So, what does this tell you about me? For one, you can trust that every recipe I post is more than delicious and has been meticulously tried and tested for you. Also, that I’m an anal freak. Enjoy! Love Ina! Her chicken with 40 cloves of garlic is also one of my FAVS.
And, funny thing, I posted a lemon chicken recipe last week. Great minds think alike, no?
Also, did you know Pioneer Woman will be in Baltimore in September at the Book Fair? I am going to try and check her out. Should be fun.
