Watermelon Salad

I’m not quite sure what has happened to my boyfriend, but if anyone can find the Tim Hiteshew I originally fell in love with, let me know.  This new Tim requested I make a salad with nuts and raisins for Labor Day.  Excuse me?

When he mentioned this I shot him a look like “who are you?”  Then, he changed his request to this Watermelon salad that I made on my birthday.  Although I’ve never heard the boy request a salad in my life, a watermelon salad would be more inline with what I’d anticipate he’d request, because it contains watermelon, after all.

But, hey, if something tastes good, it tastes good, no matter if it’s a salad or not.  The most peculiar part to me is that on my birthday, I could not get Dougie or Tim to try this.  When I had one watermelon square sitting on my plate, Tim decided to finally give it a try and ended up loving it.  Go figure.  Did he really think I’d serve something that was bad, on my birthday, no less?

I knew I had to hurry up and post this recipe since summer is coming to an end, and fast.  But, if you’re looking for something to throw together for Labor day, you’ve found your recipe.  This salad bursts with freshness, and while I’ve included a recipe for a lemon-sherry vinaigrette, it’s completely optional.  The watermelon itself is delicious enough.

Watermelon Salad

Recipe by Maura Dieringer

Ingredients

Salad:

1 small watermelon, diced or cut into slices

1 small red onion, sliced into half moons

1/2 pint cherry tomatoes, cut in half

8 oz. feta cheese, cubed or freshly crumbled

handful fresh mint leaves, chopped

handful fresh dill, chopped

Sherry-Lemon Vinaigrette (optional):

zest of 1/2 lemon

juice of 1 lemon

1/4 cup olive oil

2-3 tablespoons sherry

salt and freshly cracked pepper

And, when I discovered food blogs I bought the biggest binder I could find, printed out 250 recipes in one day and laminated and categorized each one. My dad was not happy about the ink situation. So, what does this tell you about me? For one, you can trust that every recipe I post is more than delicious and has been meticulously tried and tested for you. Also, that I’m an anal freak. Enjoy!
